Once upon a time I had a great recipe for such an ice cream; haven’t a clue where it is now but a quick search produces what appear to be plenty of reasonable alternatives. I also am certain that you could make a fantastic cannoli milkshake by making a ricotta dessert filling recipe, freezing it, then blending it with milk.
